Pictures

I purposefully did not post a Spotless - Week 3 set of pictures because I want to put a little more time between the posts so the difference can be a little more noticeable. I did take the pictures, however, and progress is still on my side.

I thought instead I would share with you a few of my favorite pictures I've taken in the last year or so. Enjoy.

Cookies!

I went to the grocery store this evening feeling like I wanted something sweet. Unusual. I looked down the cookie isle and tried to find a cookie that didn't have artificial flavors or unnatural ingredients. Nothing. Then I remembered some delicious peanut butter cookies Heather made a couple of years ago. I headed over to the bulk section of the store and got some organic whole oats and freshly crushed peanut butter (it was really cool to see the peanuts go from whole unsalted nut to peanut butter). I also got a little almond butter, free range brown chicken eggs and fresh ground cinnamon.

When I got home I mixed 1 cup oats, 1 egg, 1/4 sugar and 1 cup butters (peanut and almond mixture) in a mixing bowl. I dropped the cookies on a baking sheet and sprinkled them with a little bit of sugar and cinnamon. The sugar wasn't really necessary, but it looks good. Tastes delicious. No preservatives. No fake stuff. You can see for yourself. Yummy.

Spotless - Week 2

Positives for this week. I made a delicious 15 bean soup with squash and various greens. I loved every bite. So yummy. My favorite meal by far was the pesto spaghetti squash I ate Friday. Recipe: Bake spaghetti squash in oven. Remove from skin. Stir in pesto (I have some in a jar from the store.) Top with fresh, diced tomatoes and avocado. Incredibly delicious. Yum. I also ran 5 miles in 40:13 on Saturday and played soccer for the first time in years on Thursday. It felt good.

This weekend I might have messed up my experiment a little. I had a taco and quesadilla at Taco Bell and a ginger cookie while sitting around a campfire Friday night. Then I had a piece of corn bread and biscuit at Cracker Barrel and some lemon meringue pie, a chocolate cookie (I usually don't like cookies, but this one was rich and delicious,) ice cream and cake at a birthday party Saturday night. Oh well. It was all in relative moderation.

Okay. Pictures. It is fun to look at the pictures from today and compare them to last week. I can't say I see a lot of improvement, but the spots have moved around a bit.

Spotless - Day 6

Made a delicious soup yesterday morning. Enjoyed it for breakfast and lunch. Cabbage. Spinach. Collards. Sweet potato. Chicken broth. Spices. It tasted great, but after a fast Sunday the soup simply didn't keep the stomach satisfied for long. When I got home I made some brown rice. I ate it for dinner with tuna, artichokes, spinach and green beans. Every bite was party-in-my-mouth delicious. It was so good, in fact, that I ate a little too much. My stomach felt full all night and the next morning. All day at work I had a bad feeling in my throat and stomach, like I just ate a peanut butter and cracker sandwich too fast and it was stuck. Even now, 26 hours later, it burns inside me. No amount of water I drink will settle it.

I recognize this feeling... and not only from the many peanut butter and cracker sandwiches I've gotten stuck down my throat. I feel the same way when I only eat bread and bread products for an extended period of time (like when traveling.) Sometimes I feel it when I eat a lot of All Bran on an empty stomach. Did the fasting and soup clear out my stomach in such a way that when I ate the rice I could finally feel the way my body is reacts to it? Is my digestive system rejecting the rice? or did I simply eat too much?

I will eat it more sparingly in the future and see if it makes a difference. I will also stick to the vegetables. Not only are they yummy, but they don't make my stomach ache.

Spotless - Week 1

To begin, I've taken some pictures for the 'before-and-after' effect. I want to wait until I see some improvement to I post them (because they are rather embarrassing,) but I won't. My skin hasn't been this bad since my mission; Since 99% of you didn't get to experience that with me, now is your chance to see why I was approached everyday with suggestions on how to wash my face.

What I've been doing
I began researching hormones and acne. Website after website addressed this issue. Most were written by adults who have suffered from acne for years. All of them generally point in the same direction. Diet, Stress, and Exercise. Due to the fact that I exercise more these days than I have in years and that I am less stressed than... ever, changing my diet should have the most profound effect on my spots.

Each website gave a list of foods to avoid and foods to enjoy. Reduce sugar and refined carbohydrates. Increase fresh fruits and vegetables. The lists reminded me of a nutrition book I read several years ago:  The South Beach Diet.

Apparently insulin and digestibility go hand in hand with not only weight loss, but acne. Here is a clip from one of the websites I liked called Clear Skin.

Reduce your intake of sugar and refined carbohydrates

There is recent research pointing the finger at diet — eating refined carbohydrates (white bread, pasta, rice, flour etc) and sugar leads to a surge in insulin and an insulin-like growth factor called IGF-1. This in turn leads to an excess of male hormones, which encourage the skin to excrete large amounts of sebum. This grease-like substance encourages the growth of bacteria responsible for acne.
Refined carbs/sugar = more insulin = more hormones = more sebum (oil) = more bacteria = more acne
So, if excess insulin is causing my problem with male hormones (as was pointed out so eloquently by my dermatologist), then controlling my insulin levels should also control my hormone levels - without medications.

To learn more about insulin I returned to The South Beach Diet. Insulin is produced by our pancreas to get sugar we eat out of our blood and into our bodies where it is needed. When your body detects high levels of blood sugar, it pumps out high levels of insulin. That results in a rapid decrease of blood sugar and hypoglycemia (the self-diagnosed type, characterized by shakiness and altered mood and thinking. I suffer from this when fasting or during long stretches between meals.) The solution is to eat food combinations that cause gradual rather than sharp increases and decreases in blood sugar, and to avert hypoglycemia with timely snacks. The way to know which foods cause the quickest rise in blood sugar is by learning about the Glycemic Index (GI).

The Glycemic Index
Without going into a lot of detail, low GI foods cause your blood sugar to rise and fall more slowly than foods with a high GI. Choosing foods with a low GI and high nutrient content should help me maintain healthy insulin and hormone levels, which in turn will remove my spots. For those interested, I will post more details on the GI of food later.

Action plan
Now that I better understand how food is affecting my body, choosing healthier food has been more important to me. Over the last 5 days I have become more aware of the things I eat and the healthy options available. I try to eat large amounts of low GI foods and small amounts of high GI foods. I am also eating every few hours when I'm hungry instead of waiting for the standard meal times. It has been working.

Today is Fast Sunday. As usual my body has been shaking and my mind is having a hard time thinking. It takes a lot in internal reflection and self control to have control over my mood when I feel like this. I suppose this is one of the reasons we are asked to fast in the first place. Good practice. Over the next few weeks I can see myself becoming very creative with new recipes. I will try to share some with you.

Spots

Last Friday I was in Savannah visiting my brother. My adorable little nephew was sitting next to me in the minivan on our way downtown to go sightseeing. He looked up at me and said, "Aunt Wendy, what are those things on your face?" After a short explanation about skin and bacteria he asked, "Can I count them?"

This certainly isn't the first time someone has pointed out the spots on my face. They started when I was in high school. One here. One there. Though they were a big deal to me at the time it was nothing major. Most were on my forehead and chin. They continued through college.  When I was 21 I moved to Russia to serve as a missionary for my church. Within a few months it seemed every pore on my face was infected by some new bacteria I had found in the water. I received gentle (and sometimes not so gentle) reminders from almost everyone I talked to that I should wash my face. When I would tell them that I was allergic to the water (it came out of the tap a muddy, brownish color) they would suggest new acne solutions I should try. Six years later I am still looking for some sort of cure.

I have been to several dermatologist and they have prescribed all the tricks. Topical lotions. Oral medications. Some have helped. None have cured. The one I am currently seeing has hit a home run on helping me understand the possible causes of my spots. Hormones.  He said that was the reason I have thin hair (I didn't know I had thin hair until he told me... thanks for everything Doc) and why my spots didn't get severe until my 20s. I have been on his medications for about 4 months now with no improvement.

Unfortunately I think my dermatologist is right. I have been living with a hormone imbalance. The cause is less certain. I have a theory that it is related to my diet. That is the reason for this blog. I am about to embark on a "Me and My Face" diet. Over the next month I will be researching foods and their affect on the body. I will be posting pictures and letting you decided whether or not it is working.
