I like food. I like eating it. I like making it. In fact, so much of my life is centered around the good food I make and eat that I've decided to devote a portion of my blog to just that - food.
I have been writing down my recipes the last few weeks. Now I think I will try to take pictures as well and post for any and all to try. I promise to only post delicacies, but not hard to make so you should never be afraid to give one a try.

Pumpkin Pancakes
Looking for ways to use those cute, medium sized pumpkins you used for fall decorations this year? Try baking your pumpkins and scooping out the meat for delicious, fresh pumpkin breakfasts, snacks and desserts. I made up this one this morning. It was so good, I had to share!Whisk together! (whisk from start to finish and in between each addition. Portions are not exact… just do what you think is right.)
4 eggs.
1 tsp cinnamon, ½ tsp cloves, ¼ tsp nutmeg (spices to taste).
½ tsp baking soda.
1 ½ to 2 Tbs cooked pumpkin.
2 tsp apple butter (or something sweet).
2 Tbs coconut flour (you could possibly substitute another type of
flour, but I only use and recommend coconut, buckwheat, spelt and almond flour
now days since I am avoiding wheat. Even a combination of two or three
different types would be good).
¼ cup milk (or enough to make the batter behave like batter after you
have whisked in the coconut flour. Vanilla yogurt would be fabulous, too,
especially if you were making this as waffles).
Melt 1Tbs butter in skillet, then add to (whisk into) batter. Spoon
Pumpkin Pancake batter onto buttered skillet and cook as desired. Recipe makes
6 medium sized pancakes. I ate three Pumpkin Pancakes this morning with a
little apple butter and 2 eggs on top. SO YUMMY!
I think this recipe would have made for pretty good waffles, muffins or
even bread if I hadn't added the milk in the end. Try it out and see what you
think.
